One Pot Linguini with Sundried Tomatoes, Arugula & Goat Cheese

This is a fantastic quick, weekday meal that feels indulgent. Simply top with your favorite protein (chicken, fish, shrimp, tofu, white beans) and your meal is complete!

Ingredients

  • 1/4 cup chopped sundried tomatoes, packed in oil.
  • 1 Tbsp. of oil from the tomatoes
  • 2 shallots, thinly sliced (can used 1 small onion)
  • 1 lb of dry Linguini pasta.
  • 1 tsp. salt
  • Fresh ground black pepper, to taste
  • 4 cups water
  • 10 oz fresh baby arugula (you can also use fresh or frozen spinach)
  • 2 oz goat cheese (crumbles or cut into cubes)

Instructions

  1. Boil the 4 cups of water
  2. While the water is boiling heat the oil in a 12" skillet with sides.
  3. Add the shallot and saute for ~4 minutes until they are just starting to brown.
  4. Add the dry Linguini pasta, salt, pepper and boiling water to the pan. Bring the water to a boil and then cover.
  5. Simmer the pasta for 8 minutes, stirring occasionally.
  6. Add the arugula (or spinach) and simmer for an additional 2 minutes.
  7. Turn off the heat and stir in the goat cheese until melted and creamy.
  8. Serve immediately or refrigerate for up to 5 days.
